Nutritional Qualities of Summer Fruit & Vegetables

 

Apricot

  • Their bright orange colour indicates that they are rich in beta-carotene, which the body turns into anti-viral  Vitamin A.
  • Helpful for those people suffering from infection, particularly of the respiratory tract.
  • Dried apricots supply iron and produce haemoglobin, which is helpful with those suffering anaemia.

Blueberries

  • Contain therapeutic agents lethal to bacteria, especially E.coli.
  • Excellent remedy for urinary tract infections and diarrhea. The tannins contained in the fruit are said to kill microbes.
  • Contain high levels of antioxidants, which are believed to protect against heart disease, stroke, cancer and gum disease and enhance eyesight.
  • Supports digestion.

 

Papaya or Pawpaw

  • They are high in vitamin C, magnesium, iron, copper, and manganese. They are a good source of potassium and several essential amino acids, and they also contain significant amounts of riboflavin, niacin, calcium, phosphorus, and zinc.
  • Pawpaws contain these nutrients in amounts that are generally about the same as or greater than those found in bananas, apples, or oranges.

 

 

 

Asparagus

  • Natural diuretic and laxative with a beneficial effect on the kidneys, liver and bowel. Specifically, asparagus is rich in vitamins C & E, folate and dietary fibre 
  • It is also free of fat and cholesterol.

 

Cucumber

  • To be "cool as a cucumber" add them to your menus during the warm summer months when they are in season.
  • The flesh of cucumbers is primarily composed of water but also contains ascorbic acid (vitamin C) and caffeic acid, both of which help soothe skin irritations and reduce swelling.

  • Cucumbers'hard skin is rich in fiber and contains a variety of beneficial minerals including silica, potassium and magnesium.

  • Cucumbers are also used topically for various types of skin problems, including swelling under the eyes and sunburn.

 

 

Tomato

  • Filled with antioxidants, vitamin C, as well as beta-carotene.
  • Can help prevent everything from cataracts to heart disease and cancer.
  • Lycopene is what gives tomatoes that vibrant red colour, which may help reducing the risk of cancer, esp. prostatic, breast and lung.
  • Red, ripe tomatoes can have 4 times more beta-carotene than green immature tomatoes.

 

Watercress

  • Well known for its cancer fighting potential. Its phenethyl isothiocyanate compound is particularly potent against lung cancer and bronchitis caused by tobacco smoke.
  • Excellent source of Iodine, useful for those with low thyroid activity.
  • It is a diuretic and has expectorant  and depurative properties therefore easing inflammation, ulcers and boils.
