Refreshingly light, beautifully textured and gently zingy as any good tabouli should be, this version is an alternative to using cracked wheat (bourgal). This version provides you the nutritional benefits of quinoa.
ingredients
200g royal quinoa
1 ½ tbsp olive oil
Sea salt
3tbsp lemon juice
1 cucumber, diced
3 tomatoes, diced
2 carrots, grated
½ cup fresh parsley, roughly chopped
Tamari to taste (optional)
method
- In a saucepan bring 500ml water to a boil. Add quinoa. Reduce to simmer for 15 minutes until water is absorbed. Allow to cool to room temperature. Fluff with fork.
- Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, tomatoes, carrots, cucumber and parsley.
- Gently stir in cooked quinoa.
- Add tamari to taste (optional) and serve.
