Blueberry Muffins


2 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
2 tablespoons sunflower oil
1 cup apple sauce
1 teaspoon vanilla
1/3 cup honey or agave syrup
1 cup blueberries
1/2 cup + 2 tbsp Chia whole seeds (soaked for 15 min. in a little milk)

Cooking Instructions


1. Preheat the oven to 150 degrees celcius.
2. Prevent the muffin thins with some oil to prevent the muffins from sticking; you need only 1 tsp of oil.
3. Mix the followng ingredients in a bowl: whole wheat flour, baking powder, baking soda, salt and Chia (pre soaked for 15 minutes)
4. Mix in a second bowl the sunflower oil, apple sauce, vanilla, honey, and blueberries.
5. Put everything together and mix it fast.
6. Put this mix in muffin tins.
7. (Do not use paper muffin tins, the muffin will stick to the paper.)
8. Place the muffins in the oven (150 degrees) for 25 minutes. Enjoy!

Peanut Butter Cookies

½ cup unsweetened apple sauce
½ cup crunchy peanut butter
1 teaspoon vanilla
¾ cup brown sugar
½ cup rapadura sugar
1 teaspoon baking soda
½ tspsalt
¾ cup Chia, whole seed (soaked for 15 minutes in a little milk)
1 ½ cup whole wheat flour

Cooking Instructions


1. Pre-heat the oven at 135 C.
2. Combine apple sauce, peanut butter and vanilla together and mix with a spoon.
3. In another bowl combine the flour, baking soda, brown and white sugar and salt.
4. Mix the two bowls together and add the Chia ; mix with a mixer or with your hands.
5. Make 20 balls and put them on the cookie sheet, flatten the balls a little.
6. Bake the cookies at 135 C for 20 minutes; place the cookie sheet on the center rack to avoid burning the tops and bottoms.
7. The cookies are soft when they come out of the oven. Let them cool for 15 minutes.

 

Tahini Banana Dream Smoothie

2 tablespoons tahini
1 banana
1 cup vanilla rice milk
2 tablespoon Chia, whole seed (soaked for 15 minutes in milk)

Blend the banana, tahini, Chia and vanilla rice milk together and serve.

Beetroot-Ginger Salad

4 cups apple, sliced
2 tablespoon ginger, minced
1 lemon, juice
2 tablespoon soy sauce
1 teaspoon unrefined sea salt
¼ cup sliced almonds
100 gram baby spinach
4 cups beetroot, shredded
2 tablespoons Chia whole seed (soaked for 15 minutes in soy sauce)

Method


1. Put the spinach on the bottom of a bowl.
2. Toss all of the ingredients together.
3. Garnish with spinach and almonds.
